Should it be fairly easy to tell what colour my hermits are? As in, would the blue or red be easy to see? Because, my crabs look more grey than anything (they might be a little different than grey, but my colour vocabulary doesn't extend much past ROY G BIV).

Yeah if you had the standard hermits the colors are quite obvious.
Try looking on the net to see if you can get an idea for the species

With out an ID it hard to guess what size they will get, But id say 2" is the average size.
