My yellow watchman goby ate a mid-sized cleaner shrimp. It hung halfway out of her mouth for hours. I know my experience isn't typical; YMMV.

Look on RC for diagrams. The basic plumbing is fairly simple. I don't think it makes any difference for any of your questions. The standpipe will set a minimum level for the water in your overflow.
