The other trick that i've read in another forum is use a black pancake spatula. This might be a little easter specially if you have some room behind the coral you wanted to take pictures of.

I'm assuming this is made much easier by taking the pictures in complete darkness and under exposed to already have more contrast between the coral in focus and the background

Ya he does that with some photos, but I don't think he does that to all of them.
