I like to do Triscuit crackers with just about anything - my favourite is with sharp cheddar, hot peppers, black olives and green onions.
The crackers are great because you can just microwave the entire concoction to melt the topping but the crackers stay nice and crisp - better than tortilla chips! If you add some meat to it (i.e. spicy ground beef) it becomes a meal that takes you less than half an hour to prepare.
