should check humidifier type on your furnace, if it uses a humidistat you'll be okay but if just a float type should turn off the water supply.
Also you should be monitoring your home's humidity, if you end end to much problems can range from windows fogging, structure and mould unless controlled.

yeah seems about normal. Of course it will also slightly depend on the temp of the room as well as the water but...
I go through 4-5 GPD easily. Wish I had more room than a 20 Gal ATO container under my sump that I can only fill to 15 Gal. Seems like I am always filling that thing up but with a large open top tank and sump it's pretty normal to have that much volume driven off.
