I was not impressed on snorkelling at Xcaret, only a few fish here in there and that's about it. Or maybe I'm just used to the reef that I grew up with

No, Xcaret is not about snorkeling, although you do that, too, through the caves, etc. It's more of a theme park. But it is impressive. Definitely worth spending a day there. You learn a lot about the local culture and wild life, too.
