Well ordinary baking soda will have very little affect on the pH. If you want to raise you pH you should be using soda ash (sodium bicarbonate vs. sodium carbonate).
The main thing it does is increase carbonates (alkalinity). I dont know how to answer this poll but I wouldnt use more than enough to raise your tank 1dkh in a single dose....but thats me.
