Most eels hunt with their sense of smell. When food is added to the water, they have a tendancy to snap at whatever comes close to their jaws. I've had my snowflake eel severely wound a yellow tang (which is fine now) even though the snowflake was regularly fed with a stick.
The boxfish would be easy pickings to the feeding behaviors of moray eels with it's awkward swimming.
