It's used in almost all processed/peeled shrimp and other types of seafood. Basically used to help retain moisture in the shrimp so the farms can get a higher yield.
Try Costco for seafood that doesn't have it, as they are pretty picky about what they sell. I found whole, unpeeled shrimp are more likely to be free of it as well.
One thing to note, just because its not on the label, doesn't mean it's clean. There is a maximum ppm that processors can use without having to declare it. Buyer beware.

If you have access to fresh local shrimp, this is the way to go for sure.
