An RO bypass is simply a T connector after the RO stage with one end going to "Drinking Water" and the other going to the DI cartridge.
I'm a firm believer in using both RO and DI because each stage better at dealing with certain impurities than the other one - you want to be sure exactly what you have in the end and RO alone can miss some ions that DI would pick up.
The whole "DI water" is bad for you thing is a myth IMO. Drinking pure DI is not good simply because it tastes like crap and not because it will somehow suck minerals from your body like a vampire as some believe. That's why RO/DI drinking water systems always have a "taste cartridge" consisting of coconut husks post-DI to remineralize the water. In fact, most bottled water that you pay through the nose for is simply remineralized RO/DI water. And re-mineralized RO/DI water is just that: water. Putting water through DI doesn't forever taint the water from human consumption - that's just silly.
