An idea that I had come up with a while ago for a humidity control sensor was to use the humidity sensor from a humidifier (I saw one at Home Depot for somewhere around $20.00) It turns on the humidifier when the humidity gets too low. If you used this in conjunction with a Normaly Closed relay it would turn the fan off when the humidity was low enough.
