We always take some American Money but mostly Mexican Pesos. They will not take canadian money anywhere down there. (Although there are lots of currency exchange booths around. The exchange sucks at these though.

If you find a bank machine in Mexico and withdraw money, it is in pesos and you get charged that days exchange rate. (Probably the best exchange you will find.) If you don't like carrying around oodles of cash you could get USD Travellers checks. But, personally I found them to be a PITA.
If your not sure if a bank machine is close by I would get some money exchanged at your bank here.
